There had been a lot of snow in the last 24 hours where I live. For me, I always long for a warm, home-cooked meal on these kinds of Sundays…something that will warm your soul but also doesn’t take a ton of time, something that can simmer all afternoon and you get to enjoy by dinnertime.
I found a delicious recipe recently on Pinterest, originally posted on FoodieCrush.com – Slow-Cooker Thai Chicken Soup: It is SO easy and full of delicious thai flavours…I will say that I like a bit more of a kick so I do add One extra Tablespoon of Red Curry Paste and One Tsp Chili Flakes. AND if you want to really take it over the edge, chop up some salted peanuts or cashews for additional garnish.
Not only is it scrumptious on the day you make it but it’s perfect for lunch leftovers (or dinner again!). Enjoy!
